My grandfather was in the restaurant business and he was a farmer at a time when 'slaughtering' was a part of 'harvest time.' I grew up knowing that many kinds of home preservation were a normal part of life. While my grandfather could 'source' meats for his restaurant from a fine traditional meat market, he continued to craft specialty products for family use. I remember his homemade sausages and headcheese but I also remember the wonderful hams and bacon he bought from his butcher friend, Patrick Hickey. How did they make them? Why did they have such wonderful flavor and texture?As with so many other people interested in home butchery, Rytek Kutas' 'Great Sausages and Meat Curing' was my passport to this past tradition of meat specialties. Through this book I gained the confidence and the information I needed to recreate better-than-supermarket meat products for my family. I 'reconnected' with my farming meat-processing tradition and I have been able to pass this knowledge and the level of quality in these products on to my sons and my grandchildren. I have even been invited to lecture on this subject in a local community college's culinary arts program...and it was headed by a graduate of the Culinary Institute of America. I guess he liked my sausages...and I also had equipment that this wide-ranging program lacked. Well, I was 'teaching' this book, my family experience and my own experience in using this book and in using my grandfather's recipes.I have been using Rytek Kutas' book (in two of its editions) for more than 20 years but I have also kept in touch with the writings of Michael Ruhlman and the recent work by Stanley and Adam Marianski. This prompts me to offer some observations. For its breadth of coverage on making a wide range of sausage types, Kutas' work remains unsurpassed. (The Marianski's offer a wide view of meat products and they really do a fine, up-to-date job.) I am grateful that Rytek Kutas' heirs keep this volume in print and any sausage maker can benefit from visiting the website they maintain. Rytek Kutas wrote his work with an autobiographical intent and as a vocational text for mid-sized (even artisinal) sausage makers. This is a fine pioneering (in modern times) work and it can teach a person how to make a living by providing honest cured meat products to his community. Even today, were I to enter this business, I would welcome these receipes and this information. They also market this book and it is a great source for the home producer (me) and for the owner of a small sausage kitchen. The recipes in this book may, first, be viewed with this intent in mind. When it comes to sausage, if you have heard about it; if you have tasted it; if you have wondered 'how'you can make it for yourself, you can find a very acceptible version using this recipe book.I do have a caveat: commerce is foremost. Weight-retaining (water-retaining) additives and quick-curing and quick flavoring ingredients having commercial value are frankly discussed. For true 'farmhouse' or artisanal products, these recipes might benefit from modification in the direction of the historical practices of Middle Europe or of England, such as are now presented in 'Home Production of Quality Meats and Sausages by Stanley and Adam Mariansky, which I recently purchased from Amazon and have been reading with the interest that comes from my years of experience in the home 'sausage kitchen.'But, for clarity of instuction, without regard for the basic education that the Marianski's provide, this book is just fine.

For a normal instructional book, the most I can do is 40 pages and then put it down, I was expecting the same with this book, but when I looked up at bed time, I was 180 pages into the book and still interested in going on.>.. It is clear that the author is very experienced in sausage making and helping others do the same. He is very clear about additives (beyond the meat, salt and pepper). He is a strong believer in using Instacure (TM), even in nearly fresh sausage, because it helps fight bacterial growth that could sicken or kill the sausage maker, the family, and any friends who eats the dangerous sausage. his teaching goes in easily, and he shares experiences he has had.>.. About half the book is recipes, both in 25 pound and often 10 pound volumes. Recipes are divided into the type of sausage it is: Fresh Sausage, made and eaten quickly after cooking fully; Smoked and Cooked Sausages; Specialty Loaves and Sausage; Game Meat; Specialty Meat (Hams and Bacon); Semi-Dry Cured Sausage; Dry-Cured Sausage and Meat; and Fish and Seafood - preserving and smoking.. There is about 10 pages of 100 pound recipes, in case you plan to go retail, and a Chapter on How He Opened a Sausage Kitchen, as an example of how he did it. There is a chapter on Canning, but that was of no interest to me (yet).>.. I found his down to basics style very captivating and an easy to learn the basics that I needed. It does list a lot of recipes, as the title suggests, but included in those recipes is the size of the plate to use in the grinder, how to mix the needed spices into the ground meat, how much water to add and when. Ending with how long and what temperature to dry the casings after stuffing, and the temperature to heat the sausage to, and when and how long to smoke the sausage after it has reached a particular temperature, and how to store it and where. Most recipes are just a listing of meat(s), additive volumes, and yield. His recipes are richer and much more directly applied for the novice.>.. If I were to attend a class on Basic Sausage Making, this is the text I would want to have for the class.

This review is long overdue - I've been relying on this book for 8 years. It's not the only sausage making book I have, but it's the most complete. I don't make sausage all the time - I get on a kick once or twice a year and make a few batches, then put everything away. So I have to refresh my memory sometimes. I have a few of my own recipes, but when in doubt I just follow straight from this book.Today was a great example. I'll be cooking for Thanksgiving this week, and I remember a British relative (now deceased) used to always bring bangers to go with the turkey. It's a great pairing. So I grabbed The Rytek (that's what I call it because I can't remember the title) and whipped up 5 lbs of bangers following his recipe. Turned out perfect. And while I have all the gear out, I'll make some kielbasa tomorrow.

Anunnaki god Enki had a fatherly relationship with the first two humans. Then Enlil, Enki’s brother, took over as Commander of Earth, instating a sole-god theocracy and a war against the clan of Enki and humanity for spoiling the Anunnaki bloodlines through interbreeding. This shift imposed a blackout not only of the very human nature of the Anunnaki “gods” but also of humanity’s own ancient past on Earth.

Two of Enlil’s attacks against the Enki clan and humanity are described in the stories of the Deluge and the Tower of Babel. His final attempt, after coercing the Assembly of the Gods into voting yes, was the nuclear bombing of 5 cities of the Jordan plain, including Sodom and Gomorrah, which resulted in the destruction of the Sumerian civilization and the Anunnakis’ own civilization on Earth, including their space port in the Sinai. The author reveals how, after each attempt, humanity was saved by Enki, chief scientist Ninmah, and Enki’s son Hermes.

The author explores how the Anunnakis’ reliance on technology and their recurrent wars caused them to lose touch with cosmic consciousness. And she reveals how we will be doomed to repeat this dynamic until humanity awakens to our true origins.

The Use of Nukes

The Sumerian Account

THE IMMENSELY COSTLY and permanent wars between the gods, such as the two Pyramid Wars recorded in the tablets, found their culmination in the second half of the twenty-first century BCE. The nastiest such war brought about the whole destruction of Sumer and Palestine, and it was recorded in Sumerian tablets, mainly as an immense number of “Laments” from any city in Sumer who had been destroyed. In the Book as well, it was recorded as the War of the Kings, in which Abraham took an active part, followed up in 2024 BCE, by what is called “the destruction of Sodom and Gomorrah.”

Let’s see the prologue to this war.

We learn that Terah, the father of Abraham, was a High Priest of Enlil in Nippur, the most sacred city and first capital of Sumer, created by and dedicated to Enlil. Indeed, Abraham’s first Sumerian name, Abram, meant “dweller of Nibru.Ki” (Nippur, in Sumerian).

Then Terah went to live in Ur, the new capital, the city of Nannar, heir of Enlil, when this god was given the spiritual and administrative tutorship of the two cities, corresponding with the crowning of King Ur-Nammu. In 2096 BCE, King Ur-Nammu, battling in the East on a mission for the gods, died by accident, he who had been the protégé of several gods, especially Enlil and his firstborn Nannar. The population felt that the great gods had left their protégé to die, they had abandoned him--they who were almighty didn’t care to interfere and save their chosen King, one who was only doing their will. An immense deception and questioning emerged in the minds of Sumerians, about the very Chief of the gods, Enlil, clearly expressed in the tablets.

This very year, Terah moved with his family--notably the young couple Abram (Abraham), 27 years old, and his wife and half-sister Sarai (Sarah)--to Harran, a town on the Euphrates River, in Hittites Land, northwest of Sumer . . . as if in preparation for the dire catastrophe that was to erase Sumer. When Abraham was 75, he was instructed by the Deity to leave Harran and go south, and he left with his wife and his nephew Lot, whose father had died. It is at this occasion that we can surmise that Abraham--raised to be the next High Priest of Enlil--being childless, chose Lot to be his adopted son, through whom the priestly line would pass. The move happened 24 years before the use of nukes that destroyed five towns in the Sinai plain and then the whole of Sumer through the ensuing radioactive cloud--but Abraham’s line of High Priests of Enlil was spared.

It was an Assembly of the Gods that approved the use of nukes to destroy Marduk and his son Nabu. The most violent support and incentive for the use of nukes came from Nergal backed by Enlil. It is noteworthy that, as Mesopotamia (Sumer and Akkad) was destroyed in near totality, all the Anunnaki who had their cities and abodes there (mainly the Enlil’s clan) lost their populations, properties, cattle, and crops. The land was thoroughly scorched by the contaminated wind. The only exception, the only city that escaped destruction, was the abode of Marduk, Babylon.

So, how do these gods react to their abodes and civilization being destroyed by a seemingly ill-fated wind blowing northeastward, and thus bringing back unto their own lands the lethal nuclear energy they had unleashed elsewhere? How do they react to the loss of everything--their civilization and followers--while the very city of their  arch-enemy--Babylon--was the only one to be spared? They now interpret by mutual consent that the (mysterious) “Creator-of-All” has singled out Marduk as his protégé and that, in accordance, they have not only to leave him alone but also grant him (at last) the right to possess a land of his own and to be worshipped in a temple. They also grant him the “Enlilship,” the status of the Chief of the Gods on Earth. And thus began the era of Marduk and the end of Enlil’s sovereignty.

Mesopotamia, Lebanon, and the Sinai regions were irradiated and unfit for life for a very long time to come. The consequence (that to my knowledge is not stated in the tablets we have unearthed) is that first Enlil, and then all the gods of Enlil’s clan, had to find a new land as well as new earthling people as their followers, priests, and servants. And it couldn’t be in Egypt nor in Africa at large--the domain of Enki’s clan since olden times.

During his long exile, Marduk and his son had traveled to various countries and he had already presented himself (as had been his longstanding aim) as “the” foremost god, and by the time of the use of nukes, he had gathered followers and temples everywhere. We can infer that these regions were the ones where we find him venerated as the prominent deity under various names--such as the region that was going to become Persia with Cyrus, and where he is called Ahura-Mazda (or Ormuzd), and of course the domain of his father, Egypt, where he reigned as Ra after the 9,000 years of his father Ptah/Enki’s reign, thus starting the second reign of the 1st dynasty of gods in Egypt (as stated by Manetho in his Kings’ List).

In The Lost Book of Enki, Zecharia Sitchin describes that Enlil was warned by a dream of a catastrophe to befall Sumer, and that this is how he ordered Terah to take his family out of Nippur, and then Ur, to settle in Harran; and why, still later, he commanded Abraham to move southward to Canaan and the Negev desert--where the latter took an active and heroic part in the “War of the Kings” that led to the fateful use of the nukes--the last act.

Autism. Sometimes it seems like no one really knows what that word means. Even among medical professionals, that word has so much vagueness and leeway that it sometimes seems like it can include just about anyone with some sort of abnormal behavior. In NeuroTribes: The Legacy of Autism and the Future of Neurodiversity, Steve Silberman may not answer all the questions about autism, but the questions are there and he provides plenty of fodder for discussion.In terms of a percentage of content, the majority of NeuroTribes concentrates on the Legacy part of the subtitle. Acknowledging that autism as a medical or psychological diagnosis is a relatively recent phenomenon, Silberman looks at historical figures and records, describing some individuals who, if they lived today, would most certainly be considered autistic. History buffs will enjoy reading about Asperger, Kanner, and other pioneers who first developed the idea of autism as a unique diagnosis.Sadly, for most of our history, many people we now see as autistic would have been thrown down a well, ostracized, left to die, or, for the lucky few, institutionalized. Silberman recounts the history of abuse that autistic individuals have suffered (and more recently that we would like to admit). Similarly, he traces the shift in the perception of autism, to "viewing it as a lifelong disability that deserves support, rather than as a disease of children that can be cured." Some of the "treatments" that medical professionals used to try to "cure" children of autism are truly barbaric and unconscionable. I know hindsight is 20/20, but it's hard to imagine what some of those folks were thinking. . . .Two major issues Silberman discussed were, I thought, left without a satisfactory resolution. First, the question of a relationship of autism and vaccines. In my limited reading, it seems as if the medical community has pretty well debunked the notion that vaccines, specifically the preservatives in particular vaccines, cause autism. Silberman clearly rejects that notion as well. However, he offers enough anecdotal evidence of the connection that it seems there are still some legitimate concerns. I am not a psychologist, psychiatrist, or neurologist, just a casual reader, but I have some sympathy with those parents who report drastic changes in their children immediately after receiving a vaccine. Their experiences cannot be rejected out of hand.The second issue that I wondered about is the enormous growth in diagnoses of autism. As awareness grew, and especially as autism was described in the DSM (Diagnostic and Statistical Manual of Mental Disorders, the Bible of the psychiatric profession), it raised the question as to whether there were more cases of autism, or simply that they now had a name and psychiatrists were putting the name to work. Some studies showed that the DSM "trigger[ed] a significant rise in diagnoses." They found that "awareness of autism among professionals was dramatically increasing at the same time that the boundaries of the condition were expanded. The new numbers reflected the estimates realigning themselves with the reality of the spectrum."So is there some evolutionary change leading more and more individuals to have autism? Are factors in the environment or toxins in vaccines or other man-made factors leading to more occurrences of autism? Are there really more people with autism, or is autism simply being more widely recognized? These questions don't have easy answers. They might not have hard answers. Silberman doesn't have the answers. But they are interesting questions to contemplate.Whatever the case, autistic individuals are becoming better and better at navigating the wider world. Starting with ham radio, then with the advent of computer bulletin boards and now with the various ways the internet allows people to network and create virtual community, autistic people are more connected and empowered than ever. Technology has been a huge boost for their opportunities for employment and learning. In fact, they themselves have developed much of that technology!Silberman features people like Temple Grandin, perhaps the most famous autistic person to date, to demonstrate that the possibilities for autistic people to have productive lives, impacting their chosen fields and the world, are limitless. Parents of children with autism and adults with autism still have battles to fight, and public perception is still sometimes an obstacle. NeuroTribes gives reason for hope. As an autistic adult, I pre-ordered NeuroTribes with great excitement and read it eagerly when it arrived. I think this is an important book that sheds much needed light on the history of autism research, and on the pitfalls of autism parenting culture, and gives some indication of the direction of autistic culture. However, I'm holding back on a fifth star because I felt that he could have gone much further in clarifying that autistic people do come in a great variety of personalities, abilities and disabilities; that the Kanner's vs Asperger's distinction is in fact meaningless; and most importantly that autistic people do not need to achieve great things to be valuable as human beings.

Steve Silberman is a journalist and writer for WIRED magazine who has written many readable stories on medicine and human health. In this book he brings many years of reporting and training to delve upon one of the most prominent health issues of our time – autism.Silberman’s book is rich in both human and scientific detail and shines in three aspects. Firstly, he meticulously traces the history of autism and the lives of the neurologists, psychologists and doctors who chased its elusive identity. He focuses especially on two psychologists, Leo Kanner in the United States and Hans Asperger in Nazi-controlled Vienna who identified the syndrome and pioneered its study through observations on hundreds of cases. Asperger was the first one to identify a variety of signs and symptoms that contribute to what we now call autism spectrum disorder, and his studies were expansive and nuanced. Silberman’s account of both the foibles and the triumphs of these two individuals is fascinating: while Kanner’s fault was in assigning the blame for autism to parents (he coined the phrase "refrigerator mother") and focusing on children, Asperger identified mostly high-functioning autistic savants in his publications for a chilling reason – so that the lower functioning cases could avoid the ghastly fate met by victims of the Nazis’ euthanasia program which aimed at eliminating “mentally feeble” individuals. Both Kenner and Asperger meant well, and in Asperger’s case his withholding of the identities of autistic people literally meant the difference between life and death.And yet as Silberman so adeptly demonstrates, this was one of those cases where the intentions of humane and well-meaning researchers actually caused harm to public perceptions of the syndrome. Kanner and Asperger’s story is an instructive lesson in both the vagaries of scientific discovery and human nature and the sometimes unfortunate intersection of science with politics. The selective reporting of high-functioning patients in case of Asperger and children in case of Kanner led to a massive underreporting of autistic cases and the creation of a guilt complex among parents. It also led to a delay in the recognition of autism as a spectrum of disorders (Autism Spectrum Disorders) rather than a narrowly defined condition. It wasn't until 1981 that English researcher Lorna Wing finally publicized Asperger's wide ranging observations; and it wasn't until 1991 before German researcher Uta Frith finally translated his work.Encouraged by Wing's work, when the diagnostic manual DSM-III-R finally classified autism as a widespread and bonafide syndrome with a textured and wide-ranging spread of symptoms and issues, Kanner and Asperger’s inadvertent underreporting of cases led everyone to believe that there was a sudden ‘epidemic’ of autism, a belief that triggered even more soul-searching and the assignment of cause and effect to all kinds of environmental variables including vaccines. Much of the media with its emphasis on sensationalism and simplistic explanations at the expense of subtlety and complexity did not help matters, although ironically as Silberman tells us, it was a movie - "Rainman" - that brought a lot of public attention to autism. It is in the second half of the book that Silberman sternly clamps down on fraudulent claims of connections between autism and vaccination, including the retracted work published by Andrew Wakefield.Finally, Silberman’s detailed account draws up wonderful and sometimes very moving portraits of families and individuals affected by autism. Also included are capsule portraits of famous people with autism and Asperger's syndrome like Nikola Tesla and Temple Grandin. Silberman makes it clear that such people defy easy classification, and we do them and ourselves a disservice when we stereotype and bin them into discrete categories. He interviews hundreds of people who are stricken by the syndrome and tells us the stories of both adults and children who first struggled to cope with the disease and then found solace in meeting similar people and connecting with support networks. He also profiles families from a remarkably wide cross-section of society – from people living below the poverty line to wealthy California families - who are convinced by unverified connections between the environment and autism. Silberman does not agree with them, but he empathizes with their concerns and tries to understand them. Fortunately the stigma associated with autism spectrum disorders is gradually giving way to a more subtle understanding, but as Silberman indicates there is still a long way to go. As the title puts it, his plea is for a world that appreciates neurodiversity; the fact that even people regarded as psychologically different can have very important and valuable perspectives to offer.If I had some minor gripes with the book, they were with the sometimes long-winded digressions on the lives of autism researchers and patients and the relative lack of discussion of cutting-edge biomedical and neurological research on the topic, including work from genomics and drug discovery. But these are minor gripes. Silberman has painted a rich, empathetic portrait of a devastating, baffling but ultimately comprehensible disorder and its history which we all owe ourselves to appreciate. Because ultimately, as the central message of this book reveals, the cure for autism is in understanding and empathy. The cure lies in human nature itself.

I per-ordered this book a few months ago and last week also ordered the Kindle version. My kindle version was delivered promptly this morning and I've been reading it since. I have a paperback version that is on it's way to be delivered today so I can share a copy with my husband and my doctor. Thus far this book promises to be what I had hoped it would be, another opportunity to understand myself better, and an opportunity to help others understand those of us on the Spectrum. I was diagnosed with Asperger's last year at the age of 53. Finally, after all of these years, I continue to understand that I am not broken, or in need of repair, just simply different. Thank you Mr. Silberman for your dedication to this topic and for writing what promises to be a very helpful book for the Neurodiverse and Neurotypical world.
